Now that school is starting up again, it’s time to get creative with school lunches. If you’re anything like me, you’re always on the lookout for nutritious ideas for kids lunches. I look for whole grain baking ideas. Something I can make that’s quick, easy and portable, yet healthy and tasty enough for a picky kid! Think rolled oats, whole wheat, almond flour; all musts to have a whole grain, slow burning effect that will sustain your child throughout the day. One of my son’s favorites are rolled peanut butter balls. Super easy to make and fun to eat!
About 3 cups rolled oats
Peanut butter
carob or chocolate chips
Mix the peanut butter with either carob or semi-sweet chocolate chips. Roll into 1 inch size balls with the palms of your hand. Then roll the balls around in the uncooked rolled oats until they are completely covered in oats. Refrigerate. Pack these in small tupperware containers so they don’t smooch.
